After reading here how to do this with GEM, and an evening's experimenting, I've come to the conclusion either I'm not doing it correctly or it doesn't do what I expected. Found recommendations of 95-100deg as working well for widescreen use, so tried 95 ...the only apparent effect was that now I seemed to be sitting six feet back from the steering wheel with two large blurry pillows for legs, there was no obvious change in my peripheral view (which is what I was seeking). Reduced the angle a few degrees at a time, doing a few laps with each setting; by the time I seemed a reasonable distance from the wheel again I was using 82deg, barely above default. Is this normal?

I'm pretty sure that you were changing your FOV if you were getting further away from the wheel. Just use GPLShift's option:
to change the POV back closer to the dash and wheel.
The way that I tested whether I had changed the FOV was to go to Monza, go onto the track, do a U-turn out of the pits and another U-turn near the pits entrance so that the nose of the car is against the beginning of the pit wall. That way you always have the same view. You'll see more or less of the stands on the left or the adverts over the pits on the right as the FOV changes. The POV movement will not change that outside view.

If you have a wide screen display you might want to try changing to one of the custom resolutions. I'm not playing GPL atm so can't remember how you actually do it, but I'm sure Bob will!

A short cut is to measure angle from bridge of your nose, while sitting in rig's driver seat, to left and right edges of display, then set FOV to that.
Then adjust POV forward and back until car goes where you think it should given your steering input. Generally for me this is out in front of the side mirrors, so I use the center floating mirror. (I use FOVed and GPLSA, btw, to adjust default driver view).
Exact numbers don't matter as much as what works.

Thanks. I foresee endless tinkering with GPLShift and various FOV values (running 1168x868 on a 23" wide screen) ...and of course this messed up my sound again.
Two problems:
1 - the CNTRL + arrow key does nothing in the 67 cars, but works in all the mods
2 - if I remove all the GPLShift modded exes and put my originals back in place, GEM rebuilds all of them again ...and it now rebuilds gplcf2.exe every time I start the sim (any mod) or exit GEM

In my case it rebuilds each mod exe with the mod i selected for the used player (i have a seperate player for each mod)
Which means each exe is using that mod. So atm i'm forced to use GEM before i start GPL
I haven't found what's causing this (but never found the time to do an extensive search for the solution either)
It's annoying that i can't use the shortcuts before i have selected the mod in GEM but having to switch mods frequently i see no alternatives atm

I also have a separate driver for each mod, but access all via GEM; it selects the proper mod with the last car, track, and setup used, when I select the driver. Normally it never rebuilds the exe unless I make some change requiring it. Perhaps it's time for a reinstall, it's now taken to asking if I want to save changes to app.ini every time I exit.
