Know you can install the GPL2004 Demo right now? Link to get it here: www.gpllinks.org
Placed mine in a separate folder on HD, (not default), so full install sits in Sierra\gpl like it should. Having more than one GPL install is good sometimes for testing, etc. and for repairing things sometimes...

You don't necessarily need to install Win XP on your mini to get GPL to run (it will run fine in a WINE-based emulator directly in OS X - saves rebooting), I got it to work fine in CrossOver but you will need a wheel to run it - it's an F1 sim, after all.
(For other sims, these will also run directly within OS X but a gamepad with analog thumbsticks will suffice if you stick to lower-powered cars <200 BHPish. ) Good luck, GPL should run very fine on any mini from 2009 or later

Just to follow-up...
You can run GPL today by d/l and install 2004Demo.
You don't have to wait.
But this post is to second svenvangent's advice about backups and multiple installs.
Currently, my rig features:
1. Untouched 1.2.0.2 install with no add-ons.
2. 36fps install.
3. 60fps install with all patches.
4. 2004 Demo untouched.
Then as well, entire 36fps edition is saved on two 8gig flash drives, (including copies of all add-ons installed or not, and there is a big collection of floppies sitting in shoe boxes in my closet).
Plus, be sure to use GPL Installer when you get your disc.
Whoops, just noticed you're waiting on a wheel also. I'd wait for that I think.
