The problem is that the thinking being used and repeated, is 2 dimensional. Real World optics are 3 dimensional, with size being only one of several factors involved, in how we judge distance. Distortion when close up, and parallax when further off, are 2 others, and both are changed with a change in FOV.
Luckily, our brains can adjust to a new distortion pattern, but the odd's are against the method suggested creating for us, a perfect cockpit view.

For those still interested, some more words follow.
There is an ideal veiwing distance from your monitor screen, at whatever FOV you choose to use. BUT, the depth of the much sought after realistic size will narrow, as the FOV moves further from normal human vision. This 3D factor has been totally overlooked by an increasing number of perambulators.
A wide or narrow FOV, means a visual change in the rate at which things get smaller into the horizon. They will have a correct viewing distance somewhere between near, and far from the screen. But those objects close to, will need a different viewing distance from those far away. For that You'd need a curved screen, to undo the optical mis-match the wrong setting causes.
